I hate winter! I mean I really hate winter. In all honestly I think I was meant to live on a warm tropical island where I would wear only yoga shorts, a tank top and be barefoot all day long. Wait? Have I already complained about this?

In any event, here’s the thing – winter isn’t going away and I am not moving anywhere at the moment: therefore, I need to change the way I think about winter. For example: when it snows, I will try to think about how lucky I am to have a roof over my head, or when I complain about piling on all those layers, I will try and be grateful I have a warm coat.

I will also simply grin and bear it – just like every other year. I will still eat healthy. I will still practice yoga. And as much as I don’t love to rush time, I will focus on how it will all be different in 3 months from now.

Keri’s Kitchen: Potato Chips

As you all probably know by now I am a huge potato lover – especially French fries! Yet, I never make actual fries at home, instead I make potato chips that are thicker and actually taste more like a french fry than a chip. Following? Ha! Anyway, here’s what I do:

Ingredients: Idaho potato (one per person), olive oil, salt, pepper

Cooking instructions:  Scrub potato clean. Microwave potato for @ 6 minutes on high. Shouldn’t be 100% cooked through but almost. Let potato cool. Next slice potato, with skin, every 1/4″ to produce around 8 chips. Turn on broiler. Put potatoes on baking sheet or tin foil, not touching each other.
Rub olive oil on one side of each chip, salt and pepper. Flip over. Repeat. Put in broiler. In 5 minutes start checking for when they turn golden. Once golden, flip and repeat. Ready to serve.

Keeping Your Fitness Resolutions

By now you might be tired of ALL the resolutions stories!!! I know I am. But in any event – here’s ONE more. Recently I was on WPIX Channel 11 News to give some tips on how to make those resolutions stick! So much fun to do the segment (link above). Weird though for me to be in a gym – it’s definitely been ages.
