Funny how it is only October and yet this past week I have given a lot of interviews on the topic “New Year, New You!” These stories are all scheduled for January issues (yes, there is a long lead-time). What gets me is these stories are the same every year – basically teaching individuals on how to eat better, move and sleep more, and stress less. You would think by now as a society we would know how to do this, right? But NO, we wait till the end of they year only to say next year we will do better! I don’t know about you, but can’t we just get it right other times of the year and maintain it? Alas, I guess the answer is no and lucky for me I still have stories to be interviewed for!

Keri’s Kitchen: Bucatini with Pistachio Pesto, “Vivaldi’s Spring Movement”

SO, last week was the Barilla* Pasta World Championship which is a global pasta competition bringing together fourteen chefs from around the world to represent their county and compete for the title of World Master of Pasta by cooking creative pasta dishes that embody their skills, ideas and inspiration. My type of competition!

It took place in Paris and much to my chagrin I was not there! BUT, I did get to try one of the recipes at home! Well hellooooo – “Vivaldi’s Spring Movement” created by Chef Sean Turner of the U.S.A. His bucatini with pistachio pesto simply called my name. (Yep, anything with a nut does! Thinking next time I try it with my fav – almonds!)

Oh, and guess what? It was actually my first time making a pesto sauce. I know – crazy! Being creative in the kitchen can be daunting – but I promise you it can also be so rewarding! Hey, the worse thing that could happen is that it is a disaster and you order in pizza! Anyhoo – honestly can’t wait to try another pasta recipe! SOON, real soon!

Keeping on the cooking front, I thought I’d share my recent blog for U.S. News. As you’re probably already know cauliflower is hot right now; cauliflower rice and cauliflower crusted pizza are everywhere. Personally I’m already bored with it, perhaps because I actually prefer my rice wild and my pizza crust whole wheat. SO, what did I do to find out some new cooking ideas – I asked my friends! I was really glad when an editor from Insider wanted to interview me for this article, because nothing bothers me more than when ONE study is thought to be the end all. This study has too many variables that could affect the outcome and the doctors pushing for the warning are predominately vegan and in my opinion somewhat biased. Bottom line – go enjoy a slice of pizza!
