Well I can’t believe it’s been 2 weeks since I last wrote to you all and what a crazy 2 weeks it’s been. I have been trying to settle into a “new normal” but some days are definitely easier than others. My main problem is focus – too often I just rather have coffee hangouts or cocktail hour with my friends and family – ALL virtual of course! The truth is we will all experience this a little differently, yet there will also be that common thread. But no matter what, hope you are all staying safe, healthy and at home – oh, AND please, stay positive!!!!

Keri’s Kitchen: Spaghetti Sautéed With Shrimp and Veggies

I know we are all looking for easy and healthy recipes these days that use ingredients that you can stock up – SO here goes one of my most recent favorites.

Last week when I went shopping (obviously keeping my trips to the store limited!) I bought extra shrimp and immediately put in the freezer. BTW one could also buy frozen shrimp to begin with. I always have frozen peas on hand, olive oil and pasta – long before this pandemic began – and bought some fresh spinach (this also could have been frozen).

I sautéed garlic first in olive oil, then added shrimp, salt and pepper. Once shrimp was pink on one side turned over and added the spinach and frozen peas. Meanwhile cooking the spaghetti. I added a little (maybe a quarter of a cup?) of the pasta water (wanted the starchiness to help make a sauce and to help cook the veggies) to the shrimp/veggie combo. Once spaghetti was done tossed it into the pan with shrimp, etc, and added some parmesan cheese.

Now I know you would probably love measurements but honestly I just wing it. I trust you all can do the same — it’s easier than you think!

What is the “Dirty Dozen” list and should you be worried about it?- University of Arizona

Now I don’t usually share articles like this, BUT I felt it was important, so please read it thoroughly. Every year the Environmental Working Groups releases a list of produce that gets labeled as dirty or clean and puts many consumers into a tizzy! Obviously based on our current shopping options I wanted everyone to feel safe that ANY fruit or vegetable they choose is safe to eat! This article really puts things into perspective – check out the pesticide calculator – I found it mind blowing!

Healthy Cooking Tools – Martha Stewart Living

Sometimes when we cook the easiest thing we could do to make the meal healthier is simply use a healthier cooking tool. Genius, right? OK, maybe not SO genius. Anyway this article does provide a couple of good ideas; granted you already have them in your kitchen. If not, I can almost guarantee they will be a lot easier to get right now than toilet paper!
