The above picture was taken this past week at a cocktail making course. As many of you already know I am a die-hard vodka martini lover. And not just any martini, technically it’s not even a martini since there is NO vermouth, but Kettle One up with olives. So, when I decided to join my pal, Jackie, to learn to make other types of cocktails I was really stepping out. Rum? Bourbon? Gin? Are you kidding me? Typically I would shun any drink that didn’t include vodka, or tequila! But here’s the thing, and the message I am trying to make: I took a chance and tried something new and different. Every once and a while it is good to do that, you just might end up surprising yourself! Hey, I still dislike rum and bourbon, but I actually loved the gin cocktail. Who knew?

Keri’s Kitchen: Simple Skirt Steak
I have been on a skirt steak kick lately. But honestly, I guess this kick started over the summer and surprise, surprise – it has lasted through the fall and way into the winter. And the most surprising part, is I love it just as much even without my grill. I am not into any fancy sauces or marinates….the simpler the better!
Here’s what I do:
1. Turn broil on.
2. Rub olive oil, a dash of salt and a little more of ground black pepper on both sides of the steak. Place on tin foil.
3. Probably broil for @ 5 minutes on first side, flip and then broil for @ 3 minutes tops. I like my steak medium-rare plus.
4. The most important part is how to slice it!! This I finally learned after hubby complaining that the steak was always tough.
You MUST slice it against the grain. Some of you might be saying, “duh” right now, but for me this was a game changer!

Sugar, sugar, sugar….it’s all we hear about these days! To think I grew up eating Ring Dings and Yodels! Gasp 🙂 Anyway, I am sure many of us could definitely afford to eat less ADDED sugar. And here you thought eating at any chain restaurant would be a total disaster! The truth is, it doesn’t have to be. I’m not saying it is easy, oh no, it can be far from that. But, if you really take the time to read the entire menu and commit yourself to making a better choice, the choice IS there!
