In less than a month it will be a New Year – wow!  So let me go on the record right now and say how I am not a fan of resolutions! Surprised? Probably not. I have always been a fan of the saying: “Do not put off till tomorrow what you can do today!” And guess what folks — that applies to anything that you see fit as a resolution. Healthy eating? Fitness? Be kinder? Do better TODAY. Because when tomorrow comes you will probably have a whole new bunch of excuses lined up.

Keri’s Kitchen: Split Hens with Rosemary & Potatoes (serves 2)

Sunday evenings are the perfect opportunity to cook a meal that takes longer than 30 minutes. For me, binge watching TV and putting something in the oven that doesn’t need a lot of attention is the perfect match. So, this Sunday I decided to be the good wife and cook something I knew would make hubby happy (Bartley loves poultry – personally I don’t). One of the most important things for me though is that whatever I am cooking requires few ingredients and very few steps a long the way.

Here’s what I did:

  • Preheated oven to 425 degrees.
  • Took one large Idaho potato, scrubbed it, dried it, and cut into @ 1″ cubes.
  • Put hen in sink, removed insides, and then cut the back bone and split the hen open. (This tip thanks to one of my patients was the impetus for this meal!)
  • Placed the hen’s breast side up on aluminum broiler pan (love to be able to throw it away when done) and the potatoes surrounding it and brushed olive oil over them both.
  • Next I took ground pepper, rosemary and salt and sprinkled on top. (I don’t measure – but definitely light on the salt).
  • Cooked for @ 1 hour – turning potatoes twice so they don’t stick to pan – until skin on hen was nice and crispy.

The final hen can be split in two and served with the potatoes and veggies of your choice!!!!

And here we go again! If I said it once, I will probably say it a thousand more times – there are NO silver bullets! Weight loss happens because a person changes their behavior towards food. NOW on the other hand – drinking water is extremely beneficial. Thanks to a new blog by Vitamin Shoppe I got to put the whole thing in perspective!! Well at least I think I did.
