Yep, it’s that time of year again. My annual street photo of NYC in bloom. Ohhhhh SPRING, how I have missed you!!! And just like clockwork, all my clients start revving up their fitness and healthy eating to get ready for Memorial Day Weekend. The more things change, the more things stay the same! Sound familiar? Anyway, I won’t bore you with my usual rant of why wasn’t everyone focused ALL year round on their personal health goals, and why just get focused today, blah, blah, blah; BUT instead I am just going to be thankful that a light bulb went off in their head and they want to be on track NOW. Fingers crossed that it stays that way!

Keri’s Kitchen:  – Pasta with cottage cheese

For me, pasta with cottage cheese is the grown-up comfort food version of pasta with cream cheese and butter (and ketchup) that I grew up on. OK, please don’t judge! Now I know there are a lot of cottage cheese haters out there! Why? I’m not exactly sure, but don’t knock this “recipe” until you’ve tried it. It’s creamy and tasty, provides lots of protein, and is SOOO easy to make.

Ingredients:
Pasta of your choice – @ 1 cup cooked
2% cottage cheese or full fat, NOT non-fat – @1/2 cup
Green veggie (optional but highly recommended – I used green peas and chopped broccoli) – the more the merrier!
Ground black pepper to taste

Cook pasta. Drain. Put pasta back in pot and mix with cottage cheese over low flame. Stirring frequently so it doesn’t stick to pot. (OR you could put pasta in microwavable container with cottage cheese on top and microwave for @ 2 minutes. Hence – easier pot to clean.) Cottage cheese should melt a little and take on a creamy consistency. Toss veggies in at end.

Do You Need Protein Supplements?Allure Magazine

This is one of many silver dollar questions!!! The short answer is NO. At least for the average, healthy individual who is consuming a well-balanced diet. Actually, most people are probably consuming more than they even need. Now of course there are always exceptions, especially as we age OR if training for a high endurance sport. But we should always look towards FOOD FIRST and then supplement as necessary. Read on ……
