Just when we thought winter was behind us, mother nature surprises us. Snow in the middle of March – I guess why not? For those of you living in warmer climates I bet you are feeling rather grateful at the moment; I know I would be! A funny thing about storms in my opinion are how people react to them prior to their arrival. I have been with my hubby for god knows how many years and he still asks me, “When are you going food shopping to stock up?” And my answer never changes, “Not stocking up!” Living in a city I guess makes things a lot easier. I only went food shopping yesterday because I needed stuff for dinner. (Was in the mood for a skirt steak, and they were out of it! Hmmmm, maybe Bartley has a point?) Basically I am a daily shopper, buy what I feel like cooking that day, except of course for staples. In any event, I hope everyone is safe and sound today and has everything they need. Personally, I’m hoping for a new meat delivery to Grace’s. Ha!

Keri’s Kitchen: Simply Barley
I always tell my patients to eat a variety of grains mainly because I don’t want them getting bored with just one and eliminating from their diet. They are just too good for you But the truth is that they, like I, somehow manage to get in a rut anyway and end up serving only one type for dinner, night after night. And then…..nada. So the other night I decided to take my own advice and I cooked up a batch of barley. Honestly, I forgot how much I liked it!
It is so easy to cook; however, since time consuming (40-45 minutes on the stove top) I recommend cooking extra and actually freezing in portion sizes.. A half cup of cooked pearled barley is only 97 calories and provides 3 grams of fiber. It is packed with vitamins and minerals, including: thiamine, niacin, selenium, iron, magnesium, zinc, phosphorous and copper.
I enjoyed mine as a side dish (made simply in water) with salmon and Brussels sprouts. Yes, for many boring, but for me heaven. However, there are so many other ways they can be served, just google “barley side dish recipes”, the choices are endless and hopefully for you – exciting!

As I mentioned above I practically go food shopping everyday. Sure I have staples in the house, such as, milk, OJ, seltzer, eggs, oatmeal, peanut butter, etc…..BUT I never quite know what’s for dinner until that day (or even night!). I admit living in NYC allows for this type of behavior. Thanks to the Fitbit Blog I got to chime in about other behaviors of mine in the supermarket. Loved reading about my nutritionist pals tips as well, and I guess not surprisingly – we have a lot in common!
