Last week on social media I shared this quote: “If you don’t like where you are than change it. You are not a tree.” I LOVE this and so did many others! Truth is, most times it is far easier to complain about something than it is to put the work into changing it. Whether it’s in our relationships, work, or health, I think we are all guilty of this on some level. So please remember – you are NOT a tree – you can up root yourself and move forward without a tornado to get your started!

Keri’s Kitchen: Grilled Scallops

During the summer I cook a whole lot more than during the winter months and honestly it’s all about grilling. I’m constantly trying to think of new things I can easily prepare, cook in no time, and of course taste good!!! Last week it was scallops.

Here’s what I did:
1. Heated clean grill to medium high.
2. Took bay scallops and brushed both sides with olive oil, thyme, parsley, salt and pepper.
3. Laid out evenly on sheet of aluminum foil. (Person at Citarella’s fish counter suggested this; however, I think you could also place scallops directly on heated grill.)
4. Placed on grill and cooked for @3 minutes per side. Opened one with a fork to make sure if was cooked through.

Served with sauteed spinach (a little garlic and oil) and black rice (@ a half cup).

P.S. If you don’t have a grill or grill pan I also think this could be done in the broiler!!!

6 Healthy Ways to Eat and Drink Yourself Cool This Summer U.S. News Eat + Run

The other day I was sitting outside on my deck and boy was it hot out!! (Please note: I am not complaining!) As I was trying to stay cool I found myself drinking my go to – 3/4 cup seltzer with 1/4 cup OJ or lemonade – and this got me thinking! What do other RDs do and maybe there is a story of interest here! So hence – my latest US News blog! BTW – what I probably really would of loved – a nice cold margarita!!!!

Here’s a shocker: I buy hotdogs and serve them to friends and family!! Gasp! OK, so I don’t eat them myself but that is ONLY because I really don’t like the taste. NOT that I think a hot dog should never touch someone’s lips. Glad to of been able to give this interview and I hope next time you grab a dog you leave the guilt behind!
