With all the cold weather and snow we’ve been having in the northeast, I’ve already begun dreaming about the spring. (I know – I need to get better at staying in the present!) As I was looking through photos the other day (yes, I was procrastinating) I ran across this one of me and Cooper. He was such a little pup then, and I was reminded, once again, of how quickly time flies. Sure I can’t wait to be without a jacket again, but I also don’t want to rush time. Here’s to us all slowing down a little, and taking each day (and moment) as it comes!!!

Keri’s Kitchen: White Balsamic VinaigretteRecipe from Swirls of Flavor

I have recently become a salad dressing convert! And I mean by that is I have finally started to make my own on a regular basis vs. buying bottled from the store. This is actually EPIC! Truthfully I use to make it ONLY for holidays and ONLY because my son was like “Can you bring salad with the special dressing you make?” So there you have it….

The recipe can be found in the link above but here’s the gist of it:
1 cup extra virgin olive oil
1/2 cup white balsamic vinegar
2 tbs of cream Dijon mustard of whole grain Dijon mustard
4 tsp sugar (I actually used 1 Splenda packet)
1 tsp kosher salt
1/2 tsp garlic powder

Combine all, whisk or shake in jar (I use a mason jar) until thoroughly blended. Refrigerate what you don’t use; it will stay fresh for up to 2 weeks!

I admit, the word “detox” makes my skin crawl. Perhaps, it’s from hearing one too many times in the yoga world students AND teachers cluelessly doing a detox together! OR from reading about yet another celebrity who lost ALL this weight on some crazy detox (Oh, hello Master Cleanse!) and shares on their social. Detox teas have recently been all over the place with many healthy claims that are a bit too good to be true. I get to the bottom of it in my recent blog post for U.S. News.

There is a new kid on the block and they are called postbiotics. Almost a year ago now I partnered with EpiCor, a postbiotic ingredient.
