I cannot believe how fast the summer seems to be flying by. I always remember my dad saying: “The older you get, the quicker time seems to go”. Oyyy, am I getting “older”? Anyway – that’s why the whole notion of living in the present is SO important. Putting something off till tomorrow can be like a blink of an eye. It happens so quickly you don’t even know it’s happening. So if this was the summer you were going to eat more fresh fruits and veggies – go for it! Bike ride more and try surfing? Go for it! Handstand on the beach for longer than a second? (Talking to myself here!) Go for it! Because what are you really waiting for? Thanks Dad!

Keri’s Kitchen: Egg-Avo Salad

Always looking for ways to enjoy my favorite foods. Well hello – avocado and eggs! This recipe is totally not fancy and probably in truth not very creative. But oh so delicious!

Ingredients:
2 large eggs
1/4 avocado (with the avocado I can use less mayo and get more healthy fats!)
1 tsp of regular mayo
ground pepper

Instructions:
1. Hard boil eggs
2. In a bowl, chop 1 whole egg + 1 egg white to fairly small pieces
3. Smash avocado in bowl and combine with eggs and mayo
4. Sprinkle with pepper as desired (a little dill too if you like)

Serves 1

As a die-hard sandwich lover I suggest eating this between 2 slice of 100% whole grain bread!

Is ice cream ever “good” for you?? Well, some may argue it is good for their mental health! Ha, anyway – loved being interviewed for this article because so many products’ claims today can be rather misleading. If you want a low calorie ice cream why would you eat an entire pint and not the recommended serving size? If an ice cream has more protein in it should that be a reason to choose it? I am not saying not to buy this product, but just consider your reasons for it. Read on my friends…..
