Product Pick of the Week: Amy’s Organic Light in Sodium – Lentil Soup

Think outside of the can! I use Lentil Soup as “sauce” for pasta dishes. When going for canned, I always like to go with a lower sodium version, like this one. But hey, if you really think you need more salt – grab your salt shaker. I’m sure you know where it is.

For this dish, first I sautĂ© shredded Brussels sprouts in garlic and oil then I add the soup (just like i would add a marinara sauce), and then some green frozen peas. You can even add more veggies if you like. If I have some leftover broccoli I might throw some of that in too!! Sometimes I also add extra beans or if I am in a meat mood – a little cooked ground sirloin beef. Be creative. Top with a sprinkle of parmesan cheese and a super, simple pasta dish is served.
