So often a patient will say to me: “Oh, I don’t know how to cook that!” And my reply: “Guess what, until I made it the first time neither did I!” Years ago I ONLY ordered steamers in a restaurant. And I LOVE steamers. So, one day I decided I could do this. Went to the seafood market, asked how to cook them, bought them and home I went. I then followed the directions and crossed my fingers. Success! Truthfully since that first time I sometimes forget the directions I was originally told and have go Google it. Really with Google there are no excuses! If you think about it, what’s the worst thing that can happen? One failed dinner, oh well, in the scheme of life, who cares? OR in my example – a masterpiece!

Keri’s Kitchen: Grilled Spicy Orange Shrimp

Summertime equals grilling time! And in my household the responsibility falls on me. (Hubby neither cooks nor grills.) Now don’t get me wrong, I am not complaining but do feel the pressure sometimes to come up with a new and exciting dish. SO – thanks to Miryam of Eat Good 4 Life and my friends/partners at Florida’s Natural® Brand Orange Juice I found just the one. This recipe is not filled with too many ingredients and instructions that make my head spin; PLUS, love the idea of cooking with OJ because it provides natural sweetness packed with vitamin C and potassium versus just plain old added sugar with NO nutritional value. Oh – and not just any OJ, but the one where I know all the oranges come from Florida!

Ingredients:

2 lbs fresh, uncooked jumbo shrimp deveined and cleaned. (Personally I like to use medium or large shrimp)
1 cup not-from-concentrate Florida’s Natural® Brand Orange Juice
2 tbsp soy sauce (I prefer a low-sodium version)
1 tsp arrowroot powder
1 tbsp honey
1 tsp pepper flakes

Instructions:
1. Place the sauce ingredients into a small saucepan and stir constantly, over medium to low heat, until it thickens. This will take about 3-5 minutes. Set aside.

2. Place 5-6 shrimp on each skewer. With a brush, brush the shrimp with the sauce.

3. Grill over medium to low heat for 3-5 minutes on each side. You can brush more sauce over the shrimp after they are grilled, if desired.

4. Sprinkle some sesame seeds and fresh herbs, if desired. Serve immediately. Anchor

When I had this for dinner I enjoyed it with cooked barley and grilled corn on the cob, did not sprinkle with the sesame seeds or fresh herbs. (3 steps were enough for me!) Served hubby twelve pieces and myself eight – had leftovers for lunch in a salad with avocado and black beans. Yummy!
